A staple in Italian or Turkish cuisines, the borlotti beans are also known as “Roman” beans or cranberry beans. Cooked, they become creamy and can be used in a variety of dishes, such as casseroles, soups, or in salads.
Use 100g of beans per serving. Soak for 12h in cold water. Transfer to a pot with 3 times the volume of water. Bring to a boil, cover, and let it simmer for 1 hour.
