Couscous
Couscous is a staple in North African and Middle Eastern cuisine, featured in traditional dishes like Moroccan tagines and Algerian couscous. While Algerian couscous includes a variety of spices, vegetables, and meat, the couscous being sold is typically just rolled semolina.
Use this versatile ingredient as a base for salads, as a side dish, or to add texture to stews and soups. For a sweet treat, mix it with nuts, dried fruit, and honey.
Usage
Use 90g of couscous and an equivalent volume of water per portion. Pour the couscous in a pot of boiling water and remove from heat immediately. Let it sit, covered, for 10 minutes or until it has absorbed the liquid completely. For extra flavour, toast the couscous a few minutes in a pan with olive oil before cooking and add broth to your cooking water.
