French green lentils
Also known as lentilles du Puy, they originate from the Puy region, in the center of France. While smaller than brown lentils, they have a stronger and earthier taste.
You add them to salads, pies or pilafs.
Usage
Use 100g of lentils per serving. Soak for 12h in cold water. Transfer to a pot with 3 times the volume of water. Bring to a boil, cover, and let it simmer for 40-45 minutes while stirring from time to time.
